We are proud to present Malaysian masterchef Sky Tai, the World Sushi Cup Champion 2018, who will showcase his exceptional skills at The Annual Seafood Dinner held at Fairmont on 29 September.
As Sky Tai complements the already star-studded team led by the new Seafood Dinner maestro, Markus Dybwad, accompanied by Filip Bendi, Jimmy Chok, and Jo Bøe Klakegg, we can confidently state that the Sky is the limit for this year’s Seafood Dinner!
Chef Sky Tai is renowned for his expertise in the Japanese omakase sushi concept that embodies the centuries-old craft of Edomae sushi, which he pays tribute to at his restaurant Shinsora in Singapore. His dishes strike a perfect balance between boldness and refinement, showcasing his creativity and personal touch.
During his childhood, Sky Tai developed a deep admiration for the art form while watching a Japanese drama series called “Shota No Sushi.” Inspired by the aspiring sushi trainee featured in the show, he nurtured a profound ambition to become a sushi chef himself.
In his sushi creations, Sky Tai ingeniously incorporates Malaysian elements, including maki rolls using otak-otak and tamago, ikan bilis as a crunchy topping, and century eggs infused into various menu items.
